Where do you live?
I currently reside with my parents on Long Island, New York. About 45 minutes outside of NYC.
What are your eating philosophies?
I truly believe that all foods fir. That you can nourish yourself in all aspects through food. I believe that everyone is different and that there is no “one size fit’s all” when it comes to nourishment. I have been working hard on listening and reading my body so I can be as happy as possible. I believe that food is meant for fuel, enjoyment, and nourishment. I believe that if you fuel yourself with proper nutrients you will live a happier, healthier lifestyle. Eat for your own body and no one else’s.
Why did you start Chelsea’s Cravings?
I started Chelsea’s Cravings (originally called The Paleo Cavewoman) in 2013 at age 19, when I was diagnosed with extremely high blood pressure and pre-diabetes. After receiving approval from my insurance company for LapBand surgery, I decided to forego the surgery and attempt to lose the weight myself by joining a new gym and starting a healthy eating pattern. In 8 months, I lost over 70lbs and made sure that my blood pressure was no longer a health risk.
My goal was to share my experiences and amazing recipes to help motivate and help others. After many up’s and down’s I decided that I wanted to learn more about food and how it can heal. This lead me to go back to school to become a Registered Dietitian.
How has changing your diet had an impact on your life?
Through changing my diet I, personally, have changed so much. Living a healthy lifestyle is so much more than weight loss, it made me feel better, smarter and faster. I am able to workout longer and I have more energy throughout the day. All in all, this has been the best thing that has happened to me.
Are you Paleo?
I don’t like to place myself in a box. I will say that I eat as clean as possible, leaving out all processed foods. But, I will also say that I LOVE pizza and chocolate. I try to read my body and feed it the proper nutrients it needs.
What is your favorite thing to eat?
CHOCOLATE and steak 🙂
Are you still in school?
Yes! I am currently on the road to becoming a Registered Dietitian. I have a few months left of my dietetic internship and I will be graduating with my MS in Nutrition and Dietetics in October 2018.
